Ice Cream Fun!

Put 1 cup of Half and Half, 2 tablespoons of sugar,
and 1 teaspoon of vanilla flavoring 
in a quart size Ziploc freezer bag
You can choose other flavors
and add food coloring for extra fun

 

Take a gallon size Ziploc freezer bag and fill half way with ice
then add 1/2 cup of salt ( we used canning salt).
Put the bag with liquid mixture inside the gallon bag and seal.
We put on glove to protect our hands from the cold,
 you can also wrap the bag in a towel.
Toss the bag between your hands for 6 to 8 mins.
To help the time to pass put on a favorite song
and dance and shake the bag at the same time!
Take the quart size bag out of the gallon bag
 and wash the ice and salt off the outside of the bag.
Open the quart size bag and be amazed at your creation
It's yummy. Try it, you will like it too!

Banana Muffins


Honey's Banana Muffins

Ingredients
3 to 4 bananas
1/3 cup softened butter
1 cup sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 cup of flour
1/2 cup of dry oatmeal
Mixture of 1 cup of sugar and 2 to 3 teaspoons of cinnamon

Preheat oven to 350

In a medium size bowl smash bananas
mix in plain sugar and 1 tablespoon of water
let it set for 15 minutes
add egg and vanilla, then stir
add soda, salt, flour and oat meal
blend with a mixer for one minute
butter muffin pan and divide batter into the cups
pour cinnamon sugar mix on top of each muffin
bake for 15 minutes. Let them cool.
go around each muffin with a knife to loosen sugar
gently lift each muffin out of pan.
enjoy!

Hummingbird Cake

Hummingbird Cake
Kendall and I were watching "Cupcake Wars" on the television and one of the cupcakes they made was based on the Humming Bird Cake aka Italian Creme with a few additions.  In the mood to bake, I looked up the recipe and just happened to have all the ingredients, so I made one. The cake is 3 layers so it is definitely meant to serve 12 or more people.  The cake turned out pretty good, a little dry, but I blame that on my oven, it's very moody. Very Yummy Broccoli Cheese Soup

Broccoli Cheese Soup
Serves 4
Ready In: 30-60 minutes

Ingredients:
1/2 cup Butter
2 cups half-and-half
2 cups chicken stock or bouillon
1/2 pound fresh broccoli
1/2 tsp. nutmeg
8 ounces grated sharp cheddar
2 Tlbs. cornstarch
salt and pepper to taste


Directions: Saute onion and broccoli in butter. Mix 2 tbls cornstarch into the 2 cups of chicken stock (make sure it dissolves) add stirring constantly to the onions and broccoli, bring to a boil until soup thickens, reduce the temperature to low and add the half and half also stirring constantly. Cook on low heat for 20 mins. Add cheese stir until melted, add salt and pepper to taste and nutmeg. serve.

Broccoli Cornbread

1 Pkg chopped broccoli thawed and drained.
1 large chopped onion
4 eggs beaten
6 oz. of sour cream
1 tsp. of salt
1 stick of butter or margarine melted
1 Box of Jiffy Corn Muffin mix
9x13 greased pan
Bake 15-25 min. at 400

Absent-minded teenagers!

On Tuesday I met the girls at Todd and Leslie's for dinner. Todd was nice and picked the girls up from our house at 4:00 and brought them to his. We were serving our plates around 6:00 and Lacey turned to me and gasped..I left the cupcakes in the oven!! We live 30 minutes away so I was not sure what to do. Lacey called her friend Alexis and she drove over in her golf cart and saved the day!!

We are so glad Alexis could help us out, no telling what would have happened, as is it took 2 days of airing out and washing to make the house bearable.
